Fungi such as molds and yeast are generally responsible for spoiling food and rarely cause illness. They can grow in almost any condition but grow well in acidic foods. However, some molds can produce harmful toxins. Yeasts spoil food rapidly and will produce a smell or taste of alcohol. Foods spoiled by yeast should also be discarded.
