Follow manufacturer’s guidelines for your dishwashing machine. Make sure it is clean and in good working condition. Check the temperature and pressure of wash and rinse cycles daily. Learn the proper water temperature, conveyor speed, water pressure and chemical concentration. This information should also be posted on the machine.

High temperature machines use heat to sanitize.The final sanitizing rinse must be at least 180°F. However, stationary rack and single-temperature machines only need to reach 165°F

Chemical sanitizing machines use chemicals to sanitize. These clean and sanitize at much lower temperatures  Follow the temperature guidelines provided by the manufacturer. Chemicals must be mixed properly so that they are effective but not toxic.
