All food handlers have the potential to contaminate food. This happens when they have a foodborne illness, gastrointestinal issues, or they touch anything that contaminates their hands. There are some specific things managers must focus on. First, create personal hygiene policies and retrain food handlers on these policies. 

Managers must model correct behavior at all times while they supervise these food safety practices. Lastly, they must revise personal hygiene policies when laws or science changes.
