Meats such as fish also have temperature control requirements. In order to keep meat cool, you can place ice in a tray with some water underneath the tray with the meat. Keep everything covered and verify the temperature of the meat. As Chef Bernard cuts onions and cooks; pay attention to his hands. You’ll notice that he is wearing a glove on the hand that touches the food directly.
