Food Safety on Taco Tuesday with Chef Bernard

Welcome to our Visualizing Food Safety course. This course will help you visualize the technical information you learned in the previous Food Safety course. 

We begin with a tour of the kitchen we will be working in. After getting comfortable there we will meet our chef: Chef Bernard! He is going to show us how to handle chicken and salmon to prepare tacos for Taco Tuesday. Lets get started!

  • Tabletops should be clear
  • Everything must be stored at least 6” off the floor
  • Cover appliances when not in use
  •  Ingredients must be stored separately
  • Raw meats must be separate from other food
  • Chemicals cannot be stored nearby
  • Pay close attention to your hands
  • Use separate cutting boards
  • Inspect every ingredient before you cut it
  • Do not reuse pans
  • Hang clean pans
  • Keep track of everything raw chicken touches
  • Use ice trays to keep things cooler
  • Keep everything covered
  • Wear gloves when touching ready to eat food
  • Prepare everything beforehand
  • Think about what you will be doing
  • Consider cross contamination points
