It is important that you do not reuse pans because of cross contamination and allergies. You must keep track of clean pans and dirty pans while you are cooking.  For this reason it is effective to hang your clean pans. 

Meats such as chicken have specific temperature control requirements. You must make sure that you keep raw chicken separated from other ingredients. You must also keep track of everything that raw chicken touches. You cannot allow raw chicken to touch food that is ready to eat.
